Chicken Sajii and Lahore
Chicken Sajji is a well-loved traditional dish in Lahore, Pakistan. It comes from the Balochistan province and features a whole chicken marinated in a special mix of spices. It is usually served with rice.
Ingredients and Preparation of Chicken Sajji
Marination: The chicken is soaked for several hours in a mix of spices such as salt, pepper, lemon juice, and other local spices. Some recipes also add yogurt or vinegar.
Cooking Method: Traditionally, the marinated chicken is put on a skewer and cooked over an open fire or in a tandoor (a clay oven). This cooking method gives the chicken a smoky taste and keeps it tender and juicy.
